Spinach pie

For the dough, mix all the ingredients and knead an elastic dough, which no longer sticks to your hand. If necessary, you can add a handful of flour. Wrap the dough in cling film and refrigerate for an hour.

The source of this dough, which I highly recommend for other tarts, is Ruxy.

Meanwhile, prepare the filling. Wash the spinach and then boil it for 3 minutes in salted water. drain the water and chop the small spinach.

In a pan, heat a little onion and finely chopped garlic. Then add the spinach and leave for a few minutes.

Remove from the heat and leave to cool.


Mix the egg well with the cream and cheese and add them over the spinach. Stir until smooth and season with salt and pepper.

Take the dough out of the fridge and divide it into 2 not exactly equal pieces. Spread the larger piece of dough and place it in a pan greased with butter. We raise the dough on the edge of the tray as well.

We put the filling and level. Spread the other piece of dough and cover the pie. Cut the excess dough and press a little with your finger to glue the edges of the pie. From the excess dough I made various ornaments that I put on top of the pie. Grease the pie with beaten egg and put it in the oven, on the right heat until it browns nicely on top.

Remove from the oven and let it cool before cutting. It's just as good and cold, if not even better :).


Spanakopita, Greek spinach pie

Make a dough from 200 g of flour mixed with salt, in which you add diced butter. Mix all these ingredients well with your fingers until small cocoa beans, like peas, are chewed. Now you can add 80 ml of ice-cold water and knead again until it incorporates and forms a soft dough. Form a dough disk, wrap it in cling film and refrigerate for an hour.

Preheat the oven to 180C / gas stage 4 and grease a round pie tray.

Divide the dough into 2 equal parts after it has cooled. One of the sides spread it with your fingers on the base of the tray and bake it blindly for 20 minutes. Remove the baking paper and put it in the oven for another 10 minutes.

In the meantime, prepare the filling.

Heat the oil in a pan over medium heat. Add finely chopped onion, stirring occasionally, until golden brown. Now you can put the rice and leave them on the fire together for 2-3 minutes. Put the canned spinach and let it simmer over medium heat for 10 minutes. Season with salt and pepper and mix the fresh greens in the spinach composition.

Drain the spinach filling in a strainer to make sure it will not soften the pie dough. Let it cool in a strainer. When it has cooled, you can incorporate the feta cheese and pour the filling into the blind baked dough.

You will roll the other part of the dough on the table lined with flour in a disk large enough to cover the tray.

Place the sheet of dough on top of the filling and press to the edges so that it closes like a lid. Grease the surface with beaten egg and bake in the oven for 40 minutes until golden brown.

Let it cool before cutting it into slices.

Ingredients for 4 servings

  • Wholemeal bread / graham toast (240 g)
  • Fresh spinach (600 g)
  • White mushrooms (400 g)
  • White onion (120 g)
  • Soy milk (400 ml)
  • Whole wheat flour (40 g)
  • Olive oil (20 ml / 4 teaspoons)

Spices: Caraway seeds, Freshly ground pepper, Nutmeg, Salt

Method of preparation

  1. The spinach leaves are washed and scalded in hot water for 1 minute. Then chop into large pieces.

It is important that it is of good quality and that you squeeze it after thawing it. For cheese, any Telemea cheese or any salted cheese such as bellows cheese is good. If you have saltier cheese, you can combine it with sweet cheese. If necessary, you can add cheese or you can even add a little cheese with mold.

But pie sheets are the most important. I always buy fresh sheets because they are much better, they do not stick together and I can use them without throwing them away, as I suffered in the past with the frozen ones. After you have made the filling for the pie, all we have to do is assemble it. To grease the sheets I used melted butter, but you can also use oil without problems. Put a generous layer of greased sheets, spinach and cheese filling and another layer of greased sheets. You can also put alternative layers of sheets and filling if you want, but I like the thick layer of filling in the middle.

Before putting the pie in the oven, cut it into smaller or larger portions, as desired. Once it is ready it will be too crispy to cut nicely.
