Incipit ... This recipe for corn fritters I wrote down in a little book several years ago, but, as often happens with recipes, after being written in haste with the enthusiasm of trying them as soon as possible, they are lost from sight among the various recipes to make. The other night, I was putting in order all the recipes I had pinned down to look for inspiration, I had not yet prepared dinner and I wanted something tasty and quick to put next to the salad and I jumped in my hands that of the pancakes with corn ... Perfect! Prepare, photograph and taste, a really tasty dish that this Friday seems to fall like a glove. Good day to those who pass by here :)
How to make corn fritters
In a bowl, beat the egg, then add the flour, milk and mix the mixture until it forms a smooth batter
Drain the corn and add it to the batter along with the Parmesan, the chopped basil leaves, the salt and the pepper.
Let it rest for a quarter of an hour in the fridge
Heat the oil in a pan and pour the mixture in spoonfuls
Fry the corn fritters a couple of minutes on each side, then place them on a sheet of absorbent paper
